Single-origin chocolate is made from cacao beans sourced exclusively from a specific region, country, or even a single estate. This approach highlights the unique flavor profiles influenced by the terroir—the combination of soil, climate, and geography—of the cacao’s origin. By focusing on single-origin cacao, we celebrate the diversity and richness that different regions contribute to the world of chocolate.
Mesocacao's Unique Origins
We take pride in sourcing our cacao beans directly from small-scale farmers across Central America, ensuring fair compensation and sustainable practices. Our current offerings include:
- Nicaragua, Matagalpa 70%: Grown near the continental divide between the Pacific Ocean and the Caribbean Sea, this region’s fertile soil and unique climate contribute to flavors of dark red fruits and raisins, culminating in a smooth cocoa finish.
- El Salvador, Usulután 97%: Sourced from a single plantation established over a century ago near the Pacific coast, this chocolate offers an intense aroma with mild, nutty cocoa flavors, complemented by notes of black tea and berries.

At Mesocacao, we oversee every step of the chocolate-making process to ensure the highest quality:
- Direct Sourcing: We establish direct trade relationships with farmers, paying 41% to 149% more than local market alternatives, promoting ethical and sustainable practices.
Artisan Processing: Our small-batch production methods allow us to carefully roast, grind, and conch the cacao, preserving its natural flavors and unique characteristics.
Minimal Ingredients: We use simple ingredients—cacao nibs, cacao butter, and cane sugar—sometimes adding non-GMO sunflower lecithin, to let the true essence of the cacao shine through.
